4 half ripe or green
tomatoes, sliced |

1/2 cup flour |

2 1/2 teaspoons sugar |

2 teaspoons salt |

1/4 teaspoons pepper |

3/4 cup evaporated milk |

Oil for frying |
Drain tomato slices on paper
towel. Combine flour, sugar, salt and pepper in bowl. Coat
tomatoes with flour mixture. Add evaporated milk to remaining flour
mixture; mix until smooth. Dip tomato slices into batter, coating
well. Fry in 1/2 inch oil in skillet until golden brown on both
sides. Yield: 8 servings.
