Sweet Potato Pie

 

3 Tbsp. Butter, melted

2 Eggs, whole large

1 cup sweetened condensed milk

1 tsp. Vanilla Extract

1 tsp. Cornstarch

1 1 oz can Sweet Potato Casserole

1 9" Pie shell, raw, frozen

  1. Preheat oven to 400°, set rack in center of oven with a cookie sheet.

  2. In a large mixing bowl combine all the liquids. Add the cornstarch and mix.

  3. Add the sweet potato casserole and mix thoroughly until smooth.

  4. Pour mixture in the raw prepared pie shell.

  5. Place filled pie shell in oven onto the cookie sheet. Bake at 400° for ten minutes.

  6. Reduce heat in oven to 300° and bake for approximately 40 minutes.

  7. Test the filling. The filling is cooked when the tip of a knife inserted in the center is clean when removed. Bake until filling is set.

  8. Carefully remove the cookie sheet with the pie from the oven. Allow to completely cool.
