Pork Loin Supreme

 

Marinade:

  • 2 cups apple juice

  • 1 cup hot pepper jelly

  • Blend the above well

 

Stuffing:

  • 3/4 cup marinade

  • 1 1/2 cups - 3 cups bread crumbs

  • 3/4 cup chopped pecans

Grill or bake one pork loin (10-12 lbs.) until 160 degrees internal temperature. Slice almost  through and stuff with stuffing.  Broil until nice and brown. Serve with extra pepper jelly.
