Mashed Potato Rolls - Mary Henderson

 

1 cup mashed potatoes 
1/2 cup sugar                                       
2 eggs
  1 cup scalded milk (near boiling)
1/2 teaspoon salt
2/3 cup vegetable oil
 2 yeast cakes or 3 pkgs. dry yeast
  5 to 6 cups flour

Dissolve yeast in water (according to package directions) with electric mixer on low speed.  Combine ingredients in the order given (except for the flour), stirring with a large spoon.  Add enough flour to make a firm dough (5 to 6 cups).  Put in a large greased bowl and cover top with oil.  Cover and place in refrigerator.  Use as needed with 4 days.  Roll into any desired shape and brush with melted butter.  Allow to rise 1 - 1 1/2 hours.  Bake in 400 degree oven for 8 to 10 minutes.
