Easy Lemon Pound Cake
I was out of orange juice for my regular lemon
delight pound cake so I adapted this recipe. In the ()’s my
measurements. The batter tasted good so I hope the cake will to. I will
come and update as to outcome after the party lets me know how it taste.
Ingredients

1/2 cup butter, melted (1 cup oil)

cup sugar (2 cups)

eggs, well beaten (4)

tablespoon lemon juice (2 tsp. lemon extract)

1/4 teaspoon salt (1/2 tsp.)

1/2 cups flour (2 ½)

teaspoon baking powder (2)

1/2 cup milk (2)

1/3 cup lemon juice (2/3)

1/4 cup powdered sugar (1/2)
Directions

Mix together 1 cup sugar and butter.

Add eggs and 1 tablespoon of lemon juice; mix well.

Add salt, flour, and baking powder to mixture.

Add milk.

Bake at 325°F in a well-greased loaf pan (Bundt) for 1 hour, or
until golden brown. I do use parchment paper and a floured oil
spray. Spray pan put in parchment paper and re-spray top of paper
and sides of pans. Comes out so easy. I so wish it came precut to my
9” pans.

Mix cup lemon juice and powdered sugar.

Use a toothpick to make holes in top of cake and drizzle lemon juice
and sugar mixture over the top of the cake when removed from the
oven.

Serve warm or cool.
