Cajun Squash- Dan Norman       How Dan prepared squash-tossed from fridge..

 

  • 1 Medium Vidalia, coarse chopped

  • 1 Can Cajun Style Tomatoes, process to reduce chunk size

  • ¼ Pound Smoked Sausage, sliced ¼ “ thick and quartered

  • 1 Tablespoon of I Can’t Believe It’s Not Butter

  • ¼ Teaspoon of Basil

  • ¼ Teaspoon of Oregano

  • 1 Teaspoon of Salt

  • ½ Teaspoon of Pepper                                                                        

  • Dash of Hot Sauce

                                                                                                                                   

 

Cook squash, onion and all spices in ½ cup of water and the butter for 15 minutes.  Add the tomato mix, sausage and simmer for an additional 25 minutes.  Serve over rice.  Four servings.
