How Dan prepared squash-tossed from fridge..

1 Medium Vidalia, coarse chopped
-
1 Can Cajun Style Tomatoes, process to reduce chunk size

¼ Pound Smoked Sausage, sliced ¼ “ thick and quartered
-
1 Tablespoon of I Can’t Believe It’s Not Butter

¼ Teaspoon of Basil
-
¼ Teaspoon of Oregano
-
1 Teaspoon of Salt
-
½ Teaspoon of Pepper
-
Dash of Hot Sauce
Cook squash, onion
and all spices in ½ cup of water and the butter for 15 minutes. Add the
tomato mix, sausage and simmer for an additional 25 minutes. Serve over
rice. Four servings.
