Cajun Squash- Dan Norman       How Dan prepared squash-tossed from fridge..

 

  • 1 Medium Vidalia, coarse chopped

  • 1 Can Cajun Style Tomatoes, process to reduce chunk size

  • Pound Smoked Sausage, sliced thick and quartered

  • 1 Tablespoon of I Cant Believe Its Not Butter

  • Teaspoon of Basil

  • Teaspoon of Oregano

  • 1 Teaspoon of Salt

  • Teaspoon of Pepper                                                                        

  • Dash of Hot Sauce

                                                                                                                                   

 

Cook squash, onion and all spices in cup of water and the butter for 15 minutes.  Add the tomato mix, sausage and simmer for an additional 25 minutes.  Serve over rice.  Four servings.
