Auburn Veggie Marinade

  • 1 cup water

  • 1 cup cider vinegar

  • 1 cup sugar

  • 1 each cumber, slice 1/4" thick

  • 1 each tomato, whole, quartered and slice

  • 1 each Vidalia onion slice, sliced into rings

  • 1 each squash, crookneck, quartered and sliced

Use a fork to score the cucumber lengthwise all over - it looks great after you slice it. Use other vegetables as you like.  Combine water, sugar and vinegar and mix well. Pour over the veggies and refrigerate for 24 hours, agitating periodically to wet all vegetables. Serve as a vegetable course, also great in salad, sandwich or an omelet.
