Fresh Apple Pan Cake

 

Ingredients:

  • 1 1/2 cups all purpose flour

  • 1/2 cup whole wheat flour

  • 2 cups sugar

  • 2 large eggs

  • 1 tsp. baking soda

  • 1 cup chopped pecans

  • 3 cups diced Gala apples

  • 1 cup canola oil

  • 2 tsp. vanilla

  • 1/4 tsp salt

Glaze

  • 1 cup light-brown sugar, packed

  • 1/2 cup butter

  • 1/4 cup milk

Directions:

Preheat oven to 350° and grease a 9x13 pan.  Bet eggs, oil and sugar with an electric mixer. Add salt, baking soda, flour, vanilla, apples and pecans. Mix by hand until well blended.  Spread mixture into pan.  To make glaze, combine brown sugar, butter and milk in saucepan and bring to rapid boil. Stir and cook one minute. Pour glaze over cake.
